- You'll notice my recipes ocassionally use cayanne
pepper instead of black pepper. Some natural health advocates believe that black pepper can be a liver irritant
and a digestive irritator. Cayanne, on the other hand, gives a nice amount of heat using a small amount without the
same effects. It also carries with it cardiovascular health promoting properties.
- Try 1/4 cup finely shredded or purreed carrot per
1 quart of tomato sauce instead of adding sugar. It will neutralize some of the acid in the sauce while cooking without
affecting the flavor or making the sauce sweet like sugar does. It will also add additional vitamins (caroteen) to the sauce.
