Confetti Rice
1-1/2 cups Brown Rice
3 cups Vegetable Stock
3/4 cup chopped Red Bell Pepper
3/4 cup
chopped Yellow Bell Pepper
1/2 cup chopped celery
1/2 cup chopped onion
3 cloves chopped garlic

T Olive Oil
1/2t Oregano
1/2t Basil
1/2t Rosemary
1/4 t Red pepper Flakes (Optional)
1t Sea
salt
- Add the olive oil, garlic, onion, peppers, and celery to a sauce pan. Season with Sea salt. Sauté
over medium heat for about 10 minutes, or until the vegetables are tender.
- Add the stock and rice to the pan. Season
with red pepper flakes, basil, oregano, and rosemary. Turn heat down to low and cover with a lid. Simmer for about
50 minutes, stirring occasionally, or until the rice is tender, and the liquid has been absorbed.
Lentils 'n
Rice
1 cup dried lentils
1/2 cup uncooked brown rice
2 cups shredded carrots
1/2 cup chopped onion
1/2 cup chopped celery
3 cups water
1/2 t salt
1 t dried basil
2 cloves chopped garlic
1T olive oil
- Add all of the ingredients into a sauce pan.
- Bring to a boil, turn heat to low, and simmer for about 25 minutes until liquid is
absorbed.

Can be used as a side or a main dish. You can also add some cooked chicken, turkey or "sturdy" fish if you would
like to add some additional protein to the dish.
- NOTE: lentils are LOADED with protein!
