Roasted Red
Pepper and Spinach Scramble
3 whole eggs
3 egg whites
1/8 t Cayenne pepper
1/2 cup
roasted red pepper
1/2 cup cooked spinach
1/2t salt
2 T olive oil
- Beat the eggs in a bowl
with the salt and Cayenne pepper.
- Heat the olive oil in a skillet.
- Add the roasted red pepper and spinach and heat through,
about 3-4 minutes.
- Add the eggs to the pan and let it set about 1 minute.
- Scramble the eggs until they are cooked through.
